The omakase here runs $125-$130 at dinner (or $60-$65 for lunch), delivering a thoughtfully paced progression that begins with a small starter and builds through ten pieces of nigiri before finishing with tuna maki and a spicy salmon hand roll. The rice is deliberately looser than what you might find elsewhere, practically begging to be eaten by hand rather than chopsticks. Among the standouts, the miso-marinated black sable melts on the tongue, while amberjack topped with a tiny kiss of spicy sauce demonstrates the kitchen’s attention to detail.
