Zaatar / Za'atar Spice Recipe
An authentic recipe for Za'atar Spice - a flavorful Middle Eastern Spice that can be used to season hummus, baba ganoush, vegetables, meats, etc. (My Egyptian Dad's recipe.)

How to Make the Best Zaatar / Za'atar Spice
Za’atar is a vibrant Middle Eastern spice blend that brings warmth and complexity to any dish. This authentic recipe, inspired by traditional Egyptian preparation, combines aromatic herbs with toasted spices and nutty sesame seeds, creating a versatile seasoning that works beautifully on everything from hummus and baba ganoush to roasted vegetables, meats, and even drizzled bread with olive oil.
The magic of za’atar lies in the balance of its components and the toasting of whole spices before grinding. When you take the time to toast the cumin and coriander seeds until fragrant, you unlock their essential oils and deepen their flavor profile, resulting in a spice blend that’s far more complex and satisfying than store-bought versions. The sumac adds a subtle tartness, while the sesame seeds provide a nutty richness that ties everything together.
This recipe makes about half a cup of spice blend, which will keep for up to three months when stored in an airtight container. Once you’ve made it, you’ll find yourself reaching for it constantly—sprinkled over roasted vegetables, mixed into yogurt, or as a finishing touch on grilled proteins.
