Prepare Wontons

  1. Heat oil in a large non-stick skillet over medium heat and add the frozen mini wontons in a single layer.
  2. Flip as they get golden, cooking until cooked through, roughly 10-12 minutes.
  3. Let cool. If using regular-sized wontons, see notes.

Prepare Salad

  1. Score the cucumbers with the tines of a fork. This helps them 'catch' the dressing.
  2. Slice and place in a large bowl.
  3. Add the chopped mint, chives and thinly sliced chili pepper.
  4. Grate the garlic and ginger over the bowl. Add lemongrass paste if using.

Make Dressing & Assemble

  1. Add the soy sauce, rice wine vinegar, maple syrup, lime juice and sriracha to the bowl and mix well.
  2. Toss in the cooled wontons and add salt and pepper to taste (or add a splash of fish sauce!).
  3. Chill until ready to serve.
  4. Garnish with sesame seeds, or chili crisp.

Notes

  • If you don't have regular wontons on hand, frozen mini wontons work perfectly and cook in about 10-12 minutes.
