Instructions
Prepare the Chai Raisins
- Steep tea in the ½ cup of hot water for 5 minutes, add raisins and set aside. For more flavor absorption, do this several hours ahead or overnight.
Make the Cookie Dough
- Mix together flour, oats, baking soda, nutmeg, cinnamon, and sea salt. Set aside.
- Cream together softened coconut oil, molasses, vanilla, sugar, and flax egg.
- Mix in the oat and flour mixture until combined.
- Drain the liquid off of the raisins and mix them into the dough.
Bake the Cookies
- Scoop out 1-ounce cookies, tightly packed, onto a well-oiled or parchment-lined tray.
- Bake at 350°F for 11-13 minutes until edges are lightly golden.
Notes
- For a sweeter cookie, add another ¼ cup of sugar.
- You can substitute the flax egg with 1 regular egg if not vegan.
- Softened coconut oil works best—do not melt it completely.
