Creamy Hemp Dressing

  1. Place dressing ingredients (except parsley) in a blender and blend until very smooth. Add a tablespoon more water if needed to get the blender going.
  2. Add the parsley and blend until chopped.
  3. Place in the fridge to chill. The dressing can be made ahead and will last 3-4 days refrigerated.

Broccoli Salad

  1. Finely chop the broccoli and place in a large bowl—you should have about 4 cups. Broccoli stems are fine as long as they are finely chopped.
  2. Add the cabbage, radishes, onion, and turnips to the bowl.
  3. Add most of the dressing and toss well. You want the salad really creamy and generously coated.
  4. Season with additional salt and pepper to taste.
  5. Before serving, sprinkle with hemp or sunflower seeds, add sprouts, parsley leaves, and avocado if desired.

Notes

  • If using cashews instead of hemp seeds, soak them in hot water for 30 minutes before blending for a smoother dressing.
  • Watermelon radishes make a beautiful and colorful addition to this salad.
  • This salad is best served chilled and can be made ahead for meal prep.
