Prepare the Custard
- Preheat oven to 400°F.
- Zest the orange and set the zest aside.
- In a blender, combine the silken tofu, maple syrup, oil, plant-based milk, orange juice, vanilla, salt, cinnamon, and nutmeg. Blend until smooth and creamy.
Assemble and Bake
- Cut the bread into chunks and place in a large bowl.
- Pour the creamy mixture over the bread. Add half of the orange zest and toss well to coat everything evenly.
- Add the berries and almonds, then pour into a greased 9x13-inch baking dish. Sprinkle the remaining orange zest over top.
