The Best Roasted Broccoli Recipe

How to Make the Best The Best Roasted Broccoli Recipe

Roasted broccoli is one of those simple side dishes that elevates any meal. The high-heat roasting method transforms ordinary broccoli into something magical—crispy, caramelized edges give way to tender, flavorful florets that even the pickiest eaters will love.

The secret to perfectly roasted broccoli lies in a few key techniques: preheating your baking sheet, cutting the florets to create flat edges for maximum contact with the hot pan, and giving them plenty of space to roast rather than steam. A simple coating of olive oil, salt, and pepper is all you need to let the natural sweetness of the broccoli shine through.

This versatile side dish pairs beautifully with almost any protein—from grilled chicken to pan-seared salmon. You can also use it as a base for grain bowls, toss it with pasta, or simply enjoy it on its own with a squeeze of fresh lemon juice.

Ingredients

Roasted Broccoli

Instructions

Roasted Broccoli

  1. Place an extra large baking sheet on the lower rack in the oven and preheat the oven to 450°F.
  2. Create an edge by cutting through the broccoli florets into 1-2 inch long bite-sized pieces. Cutting through the florets (rather than leaving them round) will give the broccoli an edge, to get a good flat sear on the baking sheet. If using whole broccoli heads, trim off the stem and peel the broccoli stem if needed. Cut stems into 2-inch lengths about ½ inch thick.
  3. Place cut broccoli and stems in a bowl. Add olive oil and a generous sprinkle of salt and pepper to the broccoli, lightly massaging in with your hands to get all the nooks and crannies.
  4. Once the oven is hot, remove the sheet pan, cover with parchment, and arrange the broccoli in a single layer with flat edges down.
  5. Roast on the lower rack for 15-20 minutes or until tender and crisp with caramelized edges. When you bring the broccoli out of the oven, it will continue to cook on the sheet pan. Move it immediately to a serving dish to keep it tender and crisp.
  6. Serve warm as it is, with lemon zest or with a squeeze of fresh lemon juice.

Notes

  • Preheating the baking sheet helps create a better sear on the broccoli.
  • For extra flavor, try adding a sprinkle of parmesan cheese or red pepper flakes after roasting.
  • Don't overcrowd the pan—the broccoli needs space to roast rather than steam.
