Prepare and Bake

  1. Preheat oven to 375°F.
  2. Stir together all the Szechuan Sauce ingredients except for the cornstarch.
  3. Place green beans, scallions, mushrooms, and salmon on a parchment-lined sheet pan. Spoon half of the Szechuan sauce over the salmon and veggies and toss the veggies in the sauce.
  4. Place the sheet pan in the oven and bake for 10-15 minutes (depending on how thick your salmon is). Give the veggies a toss halfway through and check the salmon. Continue baking until salmon is cooked through. Broil for the last couple minutes if you want to add color.

Finish and Serve

  1. While the salmon bakes, heat up the remaining Szechuan sauce on the stove in a small saucepan and whisk in a teaspoon of cornstarch to thicken.
  2. Pour the thickened sauce over the cooked salmon. Sprinkle with toasted sesame seeds.
  3. Divide the veggies and salmon among two bowls. Serve with rice or whole grain if desired.

Notes

  • For extra heat, add more garlic chili paste or substitute with 1 teaspoon chili flakes.
  • Asparagus makes an excellent substitute for green beans.
