How to Make the Best Shaved Cauliflower and Spring Pea Salad w/ Yogurt and Mint
This shaved cauliflower and spring pea salad is a celebration of fresh vegetables at their finest. The raw cauliflower, sliced paper-thin on a mandolin, absorbs the tangy yogurt dressing and becomes wonderfully tender as it marinates. Combined with sweet blanched peas, crisp radishes, and cool cucumber, this salad is both refreshing and satisfying.
The creamy yogurt dressing brings everything together with its bright lemon flavor, subtle garlic kick, and touch of honey for balance. Fresh mint and parsley add vibrant herbal notes that make this dish taste like spring on a plate. Don’t skip the resting time—those 15-20 minutes allow the vegetables to absorb the dressing and mellow out the initial tartness.
Top your salad with a sprinkle of Aleppo chili flakes for gentle heat and some microgreens for an elegant finishing touch. This dish works beautifully as a light lunch or as a side dish alongside grilled proteins. It’s also perfect for meal prep since the flavors only improve as they meld together in the refrigerator.

Instructions
Salad
- In a large bowl, combine the salad ingredients.
- In a small bowl, whisk the Yogurt Dressing ingredients together.
- Fold the yogurt dressing into the veggies and gently toss to combine.
- Initially, the salad will seem very tart and salty, but let it stand 15-20 minutes, and stir again before serving. Veggies will absorb the salt, and balance itself out.
- Serve with Aleppo chili flakes and microgreens or sprouts (optional).
Notes
- The thinly sliced raw cauliflower marinates beautifully in the yogurt dressing, becoming tender and flavorful.
- You can substitute edamame for the peas if fresh peas aren't available.
- A mandolin makes quick work of shaving the cauliflower, but a sharp knife works too.
