Rose Petal Jam

How to Make the Best Rose Petal Jam

There’s something truly magical about capturing the essence of a summer garden in a jar. This rose petal jam transforms delicate wild roses into a gorgeous, fragrant preserve that’s as beautiful as it is delicious. The vibrant pink color that emerges when you add the lemon juice is absolutely stunning—it’s like bottling up a sunset.

Unlike traditional jams, this recipe creates a silky, syrup-like consistency studded with tender rose petals. It’s wonderfully versatile: drizzle it over vanilla ice cream, swirl it into yogurt, spread it on warm scones, or use it to fill delicate French crepes. The floral notes are subtle yet distinctive, making this jam an elegant addition to afternoon tea or a thoughtful homemade gift.

The key to perfect rose petal jam is sourcing your petals carefully. Look for wild roses or organically grown roses that haven’t been treated with pesticides, and always collect them away from busy roads. Early morning, just after the dew has dried, is the ideal time to gather petals when their fragrance is at its peak.

Instructions

Making the Jam

  1. Place water and roses in a medium saucepan. Bring to a gentle simmer for 10 minutes, uncovered.
  2. Add 1¾ cups of sugar to the simmering petals. Stir to dissolve the sugar crystals.
  3. Add freshly squeezed lemon juice. Pay attention to the gorgeous vibrant color that emerges.
  4. Continue simmering over low heat.
  5. In a small bowl, combine the remaining ¼ cup sugar and pectin.
  6. While stirring the jam, add the pectin/sugar mixture sprinkle by sprinkle to ensure pectin incorporates without clumping.
  7. The jam may seem quite loose, but it will firm up as it sets. This remains more of a silky syrup with luscious bits of petals.
  8. Place into jam jars while still warm.

Notes

  • This keeps for 2 months in the fridge, also freezes beautifully, and canning is always a brilliant option.
  • Collect rose petals at least 50 feet from roads, in a pesticide-free area.
  • You can substitute 2/3 cup organic dried rose petals for fresh.
