Stovetop Method

  1. If using dried beans, rinse and soak for 8-24 hours. Drain and rinse well.
  2. In a large pot, combine drained beans with 5 cups fresh water, salt, chili powder, cumin, and bay leaves.
  3. Bring to a boil, then reduce heat and simmer for 1.5-2 hours until beans are very tender and can be easily mashed.
  4. Mash beans to your desired consistency using a potato masher or immersion blender.
  5. Stir in garlic powder, additional salt, chili powder, chipotle powder, and smoked paprika to taste.
