How to Make the Best Chili Lime Peach Chicken
This chili lime peach chicken is the perfect summer dinner that brings together the heat of smoky spices with the natural sweetness of fresh peaches. The combination may sound unexpected, but the sweet and spicy flavors work beautifully together, creating a dish that’s both elegant and comforting.
The key to this recipe is building layers of flavor—starting with a well-seasoned spice rub on the chicken, then developing a gorgeous caramelized glaze with the peaches, lime, and honey. Using the same skillet means all those delicious browned bits from searing the chicken get incorporated into the final dish.
Whether you’re looking for a quick weeknight meal or something impressive enough for company, this one-pan wonder delivers. Serve it straight from the skillet with some crusty bread or alongside rice to soak up all those incredible pan juices.

Ingredients
Spice Rub
Chicken and Peaches
Instructions
Prepare and Sear Chicken
- Preheat oven to 400°F.
- In a small bowl mix chili powder, cumin, smoked paprika, cayenne (or chipotle) and salt.
- Season all sides of chicken generously with the spice mix.
- Heat oil in a skillet over medium to medium-high heat and sear the chicken, top side down until deeply golden, about 5-7 minutes. If using skin-on, get that skin crispy! Turn and sear 4-5 minutes then set aside, and cover with foil.
Cook Peaches and Finish
- To the same skillet, over medium heat add the shallots. Sauté stirring often until tender about 3-4 minutes. Add the peaches. Gently sauté for 2 minutes, turning them over after they just begin to soften and caramelize. Don't overcook them here.
- Squeeze with a couple of tablespoons of lime juice and drizzle 1 tablespoon honey, stir carefully with the goal of keeping the peaches intact. Once they are heated through turn heat off.
- Nestle the chicken back into the skillet with the peaches, and if using chicken breast, just simmer until cooked through (160°F). If using thighs, place in the oven until cooked through (165°F).
- Squeeze chicken with lime and garnish with cilantro, serving in the skillet, or place all on a platter, spooning the flavorful pan juices over top, garnishing last.
Notes
- Skin-on, bone-in thighs are preferred for extra flavor and juiciness.
- Don't overcook the peaches—they should be just softened and caramelized while still holding their shape.
- Fresh, ripe peaches work best for this recipe during summer months.
