Oven Roasted Turkey Breast

How to Make the Best Oven Roasted Turkey Breast

There’s something incredibly satisfying about a perfectly roasted turkey breast—golden, crispy skin giving way to tender, juicy meat infused with herbs and aromatic spices. This oven roasted turkey breast is the ideal solution for smaller gatherings or when you want that classic turkey flavor without committing to a whole bird.

The secret to this recipe lies in the flavorful spice paste made with fresh thyme, lemon zest, and garlic. Rubbing this mixture under and over the skin creates an incredibly aromatic crust while keeping the meat moist throughout the cooking process. The addition of roasted vegetables in the pan means you get a complete meal with minimal effort.

Whether you’re hosting a small holiday dinner or simply craving turkey any time of year, this recipe delivers restaurant-quality results in about an hour and a half. The leftovers make fantastic sandwiches, and the cooking method is foolproof enough for beginners while still impressing seasoned home cooks.

Instructions

Roasting the Turkey

  1. Preheat oven to 375F.
  2. Cut veggies into bite-size pieces, toss with olive oil, salt and pepper and place in a large roasting pan.
  3. Prep the turkey breast, patting it dry. Feel free to cut out the backbone (if it is still intact) and flatten the breast with the palm of your hand.
  4. In a small bowl, stir together the spice paste ingredients, adding just enough olive oil to make a thick paste.
  5. Rub all sides of the turkey breast with the paste and feel free to rub the flesh under the skin as well, if you like. Nestle into the veggies.
  6. Bake uncovered in the middle of the oven for roughly 20 minutes per pound of turkey, or until turkey is cooked through or reaches 160F in the thickest part of the breast. Check that veggies are done to your liking.
  7. Let the turkey rest, covered in foil for 10 minutes before cutting.
  8. Serve with Mushroom Gravy and Mashed Potatoes.

Notes

  • Plan for roughly 20 minutes of cooking time per pound of turkey breast.
  • Always use a meat thermometer to ensure the turkey reaches 160F in the thickest part before resting.
  • Letting the turkey rest covered in foil allows the juices to redistribute for more tender meat.
