Roasting Whole Garlic Heads

  1. Preheat your oven to 400°F (200°C).
  2. Take whole garlic heads and cut off the top quarter, exposing the cloves inside.
  3. Place the garlic heads cut-side up in a small baking dish or on a piece of foil.
  4. Drizzle each head with about 1 teaspoon of olive oil and sprinkle with salt and pepper to taste.
  5. Cover loosely with foil and roast for 35-40 minutes, until the cloves are soft and golden brown.
  6. Remove from oven and let cool slightly before squeezing the soft roasted garlic out of the skin.

Roasting Peeled Garlic

  1. Preheat your oven to 400°F (200°C).
  2. Peel 1 cup of garlic cloves and place them in a small baking dish.
  3. Toss the cloves with 2-3 tablespoons of olive oil, salt, pepper, and optional fresh herbs like rosemary or thyme.
