Mushroom Toast

How to Make the Best Mushroom Toast

Mushroom toast—sometimes called mushroom tartine—is one of those simple dishes that somehow manages to feel incredibly special. With golden, caramelized mushrooms piled high on crusty sourdough and topped with melty cheese, it’s comfort food at its finest. Whether you’re looking for a quick weeknight dinner, an impressive brunch option, or a satisfying snack, this recipe delivers.

The secret to perfect mushroom toast is taking your time with the mushrooms. Let them develop a deep golden color before adding the aromatics—this builds layers of savory, umami flavor that make each bite irresistible. A splash of wine (or broth) at the end deglazes the pan and creates a light sauce that coats every slice.

Feel free to experiment with different mushroom varieties and cheese combinations. Gruyere offers a nutty richness, while brie adds creamy decadence. A final drizzle of truffle oil elevates this humble toast into something truly extraordinary.

Instructions

Prepare the Mushrooms

  1. Preheat oven to 400°F (or use a toaster oven).
  2. Heat oil over medium heat. Add the mushrooms, salt, and pepper. Sauté, stirring until mushrooms are golden and tender, lowering heat to medium-low.
  3. Once golden and tender, make a well in the center of the pan. Add more olive oil if needed and sprinkle in the shallots, garlic, and thyme, stirring in the center for 1-2 minutes or until fragrant. Stir to incorporate and sauté 2-3 minutes.
  4. Add the wine (or water) to deglaze the pan and stir, letting it cook off, then turn the heat off. Taste and adjust the salt and pepper—you want this to be flavorful!

Assemble the Toast

  1. Spread or layer the cheese over two slices of bread. Place on the rack in the toaster oven to toast the bread and melt the cheese.
  2. Pile the warm mushrooms over the warm, toasty, melty sourdough toast. If using truffle oil, drizzle it now.
  3. Serve with a salad and call it dinner!

Notes

  • Any combination of mushrooms works well—mix and match based on what's available.
  • For a vegan version, skip the cheese or use your favorite vegan alternative.
  • The truffle oil is optional but adds a luxurious, earthy depth to the dish.
