Mediterranean Swiss Chard Salad Recipe
Mediterranean Swiss Chard Salad, packed with summer veggies, chickpeas, olives and optional goat cheese, tossed in a lemon dressing. Vegan-adaptable.

How to Make the Best Mediterranean Swiss Chard Salad
This Mediterranean Swiss Chard Salad is a vibrant, nutrient-packed dish that celebrates the best of summer produce. Tender young chard leaves serve as the base for a colorful array of vegetables including crisp radishes, juicy cherry tomatoes, cool cucumbers, and creamy avocado slices. The addition of protein-rich chickpeas and briny kalamata olives gives this salad substance and depth.
What really brings this salad together is the bright lemon dressing. A combination of fresh lemon juice, zest, garlic, honey, and Dijon mustard creates a tangy vinaigrette that perfectly complements the earthy chard and Mediterranean flavors. The dressing is light enough to let the fresh vegetables shine while adding just the right amount of zing.
This versatile salad is easily adaptable to your preferences and dietary needs. Skip the cheese for a fully vegan version, or add crumbled goat cheese or feta for extra creaminess. The toasted pepitas add a satisfying crunch, but feel free to swap them for slivered almonds. It’s perfect as a light lunch or as a side dish alongside grilled proteins.
