Cook the Noodles

  1. Boil water and get your noodles cooking. Salt the water to give the whole dish more flavor. Cook according to the package directions. Drain and set aside.

Prepare the Sauce

  1. In a bowl whisk together oyster sauce, soy sauce, sesame oil, rice vinegar, mirin and white pepper. Set aside the sauce.

Stir-Fry

  1. Heat up a wok or a heavy skillet to high heat. When it is hot add oil (peanut oil works great) and add shallots, stirring for a minute.
  2. Add garlic, ginger, and shiitakes, stir-fry for another minute.
  3. Add bok choy and scallion white parts and stir for a minute.
  4. Add sauce and noodles and stir until just heated through, then add in green onion pieces.

Notes

  • If using store-bought oyster sauce, you may want to adjust the amount to taste as brands vary in intensity.
  • For a gluten-free version, use soba noodles made from 100% buckwheat and substitute liquid amino acids for soy sauce.
  • You can make your own vegan oyster sauce using shiitake mushrooms for an entirely plant-based dish.
