Honey Ginger Syrup

  1. Pour 1/4 cup honey into a glass measuring cup. Add 1/4 cup hot water, and whisk to blend.
  2. Peel a 1-inch thumb of fresh ginger, and place a fine-mesh strainer over the honey syrup.
  3. Grate the ginger into the strainer, then press the pulp with the back of a spoon until all the juice is extracted.
  4. Whisk the ginger juice into the honey syrup to combine. Makes enough syrup for about 5 drinks.

La Cura Cocktail

  1. Salt the rim by running the cut face of a lemon or lime around the lip of the glass, then invert onto a plate sprinkled with kosher salt and chili lime seasoning.
  2. Fill a cocktail shaker 2/3 full with ice. Add the blended scotch, 3/4 ounce of combined lemon and lime juice, and 3/4 ounce of honey-ginger syrup.
  3. Shake vigorously and pour into the salted glass.
  4. Float a small amount of mezcal on top for a smoky finish.

Notes

  • For a vegan version, substitute the honey with agave syrup.
  • The honey ginger syrup can be made ahead and stored in the refrigerator for up to a week.
  • Adjust the ratio of lemon to lime juice based on your preference—more lime for tartness, more lemon for brightness.
