Instructions
Make the Ice Cream
- If using a vanilla bean, split it lengthwise and scrape out the seeds. Add both the seeds and pod to a saucepan with the milk.
- Heat the milk over medium heat until it just begins to steam, then remove from heat and let steep for 15-20 minutes. Remove the vanilla pod.
- In a large bowl, combine the infused milk with the heavy cream, sugar, and salt. Whisk until the sugar is fully dissolved.
- If using vanilla extract instead of a vanilla bean, simply combine all ingredients in a bowl and whisk until the sugar dissolves.
- Cover and refrigerate the mixture for at least 2-4 hours, or overnight, until thoroughly chilled.
- Pour the chilled mixture into your ice cream maker and churn according to the manufacturer's instructions, usually 20-25 minutes.
- Transfer to a freezer-safe container and freeze for at least 4 hours for a firmer texture.
Notes
- For an extra creamy texture, add the optional milk powder and xanthan gum to the base before chilling.
- The ice cream base must be thoroughly chilled before churning for the best results.
- Homemade ice cream is best enjoyed within 1-2 weeks of making.
- Let the ice cream sit at room temperature for 5-10 minutes before scooping for easier serving.
