- Store in a sealed jar in a cool, dry place for up to 6 months.
Using Dried Chilies (Optional)
- Test your dried chili for heat level (it should say on the package, or taste a small piece).
- Place a whole chili in a high-powered blender or spice grinder, removing stems and seeds if you prefer less heat.
- Grind until fine and use as chili powder, adding 1 tablespoon to this basic recipe.
- Use the remainder as you would chili flakes—keep it in a little bowl handy by the stove.
Notes
- You can substitute smoked paprika or cayenne pepper for the chipotle powder if desired.
- For a milder seasoning, reduce the chipotle powder to 1/4 teaspoon.
- Mexican oregano has a slightly different flavor than Mediterranean oregano, but regular oregano can be substituted in a pinch.
