Making the Seasoning

  1. Measure and mix all ingredients together in a small bowl and give a good stir until well combined.
  2. Store in a sealed jar in a cool, dry place for up to 6 months.

Using Dried Chilies (Optional)

  1. Test your dried chili for heat level (it should say on the package, or taste a small piece).
  2. Place a whole chili in a high-powered blender or spice grinder, removing stems and seeds if you prefer less heat.
  3. Grind until fine and use as chili powder, adding 1 tablespoon to this basic recipe.
  4. Use the remainder as you would chili flakes—keep it in a little bowl handy by the stove.

Notes

  • You can substitute smoked paprika or cayenne pepper for the chipotle powder if desired.
  • For a milder seasoning, reduce the chipotle powder to 1/4 teaspoon.
  • Mexican oregano has a slightly different flavor than Mediterranean oregano, but regular oregano can be substituted in a pinch.
  • Use about 2 tablespoons of this seasoning per pound of meat for tacos.
