Prepare the Skewers

  1. Soak wooden skewers in water for at least 20 minutes if using.
  2. Place shrimp in a bowl or ziplock bag.
  3. Blend all marinade ingredients together in a blender until smooth.
  4. Pour marinade over shrimp and marinate for 20-30 minutes. While marinating, prep the pineapple.

Grill the Skewers

  1. Preheat grill to medium heat.
  2. Drain the marinade from the bag or bowl into a small saucepan.
  3. Skewer shrimp and pineapple, alternating on skewers. Skewer pineapple the flat way so shrimp and pineapple are about the same width and both lay flat on the grill. This should make 10-12 skewers (10-inch).
  4. Give the marinade a quick simmer in the saucepan until it thickens and darkens a bit. Turn heat off.
  5. Grease the grill well.
  6. Lay the skewers down, grilling each side about 3 minutes, or until good grill marks develop and shrimp is cooked through but not overcooked.

Serve

  1. Place skewers on a serving platter and drizzle with the reduced marinade or fresh lime juice.
  2. Serve immediately with lime wedges, fresh cilantro, and Jicama Mango Slaw if desired.

Notes

  • For spicier skewers, increase the chipotle powder to taste.
  • Don't marinate the shrimp for more than 30 minutes as the acid in the citrus can start to 'cook' the shrimp.
  • These skewers also work great on an indoor grill pan if you don't have an outdoor grill.
