How to Make the Best Grilled Romaine Salad with Corn, Fava Beans and Avocado
Fire up the grill for this stunning Grilled Romaine Salad with Corn, Fava Beans and Avocado—a light and refreshing summer meal that’s anything but ordinary. The magic happens when crisp romaine hearts hit the hot grill, developing beautiful char marks while staying perfectly crunchy inside. Combined with smoky grilled corn, tender fava beans, and creamy avocado, this salad is summer on a plate.
What makes this salad truly special is its versatility. Keep it completely plant-based for a satisfying vegan meal, or add some grilled shrimp for extra protein. The recipe includes two delicious dressing options: a creamy yogurt dressing with fresh dill, and a bright vinaigrette with a touch of sumac for Middle Eastern flair. Feel free to use one or drizzle both for maximum flavor.
The grilled lemon is a game-changer here—the heat mellows the acidity and brings out a subtle sweetness that ties all the components together. Fresh herbs scattered on top add a pop of color and freshness that makes this dish as beautiful as it is delicious.

Instructions
Prepare Dressing
- Whisk dressing ingredients together and set aside.
Grill the Salad
- Preheat grill to medium-high heat.
- Brush or spray romaine with olive oil, and season with salt. Grill each side briefly with the lid open until good grill marks appear, but not so long that lettuce loses its crunch. Set these on a platter, large cutting board or sheet pan.
- Grill the lemon (cut-side down), corn on the cob, fava beans and optional shrimp over medium heat. Once the fava beans are tender, about 10 minutes, shuck and divide among the romaine wedges.
- Cut the kernels off the corn and divide among the romaine. Add the diced avocado and halved cherry tomatoes. If using shrimp, add it now.
- Squeeze the salad with the grilled lemon halves, and spoon a little dressing over top. Scatter with fresh herbs.
Notes
- Don't have access to fresh fava beans? No worries, sub edamame!
- Larger size shrimp works best for grilling.
- You can use either the yogurt dressing or the vinaigrette, or both!
