Grilled Potatoes Recipe
Grilled potatoes are delicious, easy, and healthy. Their creamy interior and crispy exterior will have you coming back for more!

How to Make the Best Grilled Potatoes
Few things complement a summer barbecue quite like perfectly grilled potatoes. With their irresistibly crispy exterior and creamy, fluffy interior, these potatoes are the ultimate side dish for any cookout. The secret is par-boiling the potatoes first, which ensures they’re tender all the way through before hitting the grill.
The beauty of this recipe lies in its simplicity. With just a handful of ingredients—potatoes, olive oil, garlic, and basic seasonings—you can create a side dish that tastes like it came straight from a restaurant. The high heat of the grill caramelizes the edges and creates those gorgeous grill marks that make everything taste better.
Serve these grilled potatoes alongside your favorite grilled meats, fish, or vegetables. A drizzle of creamy dill sauce takes them to the next level, but they’re equally delicious with just a sprinkle of fresh herbs. Once you master this technique, you’ll never go back to plain baked potatoes at your summer gatherings.

Instructions
Prepare the Potatoes
- Wash and cut potatoes in half so they are roughly the same thickness.
- Cover with water and a teaspoon of salt in a medium pot. Bring to a boil, cover, and simmer gently until fork tender, about 15 minutes.
Grill the Potatoes
- Preheat the grill to medium and grease the grates.
- Once fork tender, drain the potatoes. Toss with olive oil, enough to coat well, and add salt, fresh cracked pepper, and garlic. Toss well.
- Place the seasoned potatoes cut side down on the grill, cover, and grill for 3-4 minutes, then check for good grill marks and flip after you achieve this.
- Grill for 4-5 more minutes or until heated through.
- Place in a serving bowl and sprinkle with fresh dill. Serve with the optional creamy dill sauce.
Notes
- For the Creamy Dill Sauce, mix together sour cream or Greek yogurt with fresh dill, lemon juice, and a pinch of salt.
- Baby potatoes or fingerling potatoes work great for this recipe.
- Make sure the grill grates are well-greased to prevent sticking.
