How to Make the Best Grilled Fava Beans with Mint, Lemon Zest and Sumac
Grilled fava beans are a revelation if you’ve never tried them before. Unlike the more common method of shelling and blanching, grilling fava beans in their pods creates a smoky, charred exterior while the beans inside steam to tender perfection. It’s a simple, fun way to enjoy this seasonal legume with minimal prep work.
The Middle Eastern-inspired dressing brings these grilled beans to life with bright, vibrant flavors. The combination of sumac’s tangy citrus notes, fresh mint, and lemon zest creates a refreshing contrast to the earthy, slightly sweet fava beans. A touch of aleppo chili adds just enough warmth without overpowering the dish.
Serve these as an appetizer or side dish at your next summer gathering. They’re perfect for outdoor entertaining since guests can pull the charred pods apart and scoop out the tender beans themselves—making it an interactive, memorable eating experience that’s sure to spark conversation.
