Grill the Corn

  1. Preheat grill to medium-high heat. Grill corn, turning every 3 minutes until all sides are lightly charred.
  2. Once cool, cut the kernels off the corn cobs.

Make the Salad

  1. In a large bowl, combine lime juice, olive oil, salt and pepper.
  2. Add red onion and let them marinate in the dressing for a few minutes to tame the onions if desired.
  3. Add the grilled corn, radishes and fresh herbs, and toss together.
  4. Add the avocado right before serving.
  5. Adjust to taste, adding salt, lime or pepper as needed. If you like spice, add chili flakes or a pinch of cayenne.

Notes

  • For milder onion flavor, substitute green onion for red onion.
  • You can substitute basil for the dill and cilantro if preferred.
