- Place all the ingredients (except the tahini paste) in a blender or food processor and blend until combined but not overly smooth.
- Add tahini paste and blend until creamy, leaving some of the herbs intact.
- Taste and adjust salt, acid, and heat. Add more salt, lemon, or fresh chilies to taste.
- If you want a looser sauce, add a little more water until the desired consistency is reached.

- For the fresh herbs, use any combination of cilantro, Italian parsley, mint, dill, or basil. A mix of cilantro and parsley works beautifully.
