Caramelize the Onions

  1. Slice the onions into half moons, with the grain no thinner than 1/8 inch thick.
  2. Heat a 10-inch cast iron skillet or carbon steel pan on medium-high. When the pan is hot, add onions stirring a few times and cook without oil for 5 minutes.
  3. Add the olive oil and salt, stirring for a minute to fully incorporate. Turn heat down to medium-low.
  4. Stir every 5-10 minutes for 30-50 minutes. The onions should be a dark caramel color, smell amazing and be greatly reduced.
  5. Deglaze the pan by adding 1 tablespoon of water and scrape the pan to get the stuck crusty browned bits off. This fond is bursting with flavor—don't skip this step!

Make the Dip

  1. Dice up the caramelized onions and measure out 1/2 cup.
  2. In a bowl, mix together yogurt, salt, pepper, chives, parsley, garlic powder, Worcestershire and apple cider vinegar.
  3. Fold in the chopped caramelized onions until the dip is thoroughly combined.
  4. Adjust flavors adding more salt, pepper or vinegar as desired.
  5. Serve chilled with chips, crackers and fresh veggies.

Notes

  • For a vegetarian version, use a vegetarian Worcestershire sauce or substitute with a splash of soy sauce.
  • The dip can be made ahead and stored in the refrigerator for up to 3 days—the flavors actually improve overnight.
  • Extra caramelized onions can be frozen for future use in other recipes.
