Prepare the Eggs

  1. Heat oil in a non-stick pan or well-seasoned cast iron skillet over medium heat.
  2. Whisk eggs with sour cream, salt and pepper.
  3. Pour into a warm pan and gently stir with a heat proof rubber or silicone spatula. As soon as soft lumps of eggs begin to form, lower the heat to low and shift from stirring to folding the eggs over on themselves while gently shaking the pan with the other hand. Cook until desired doneness. Turn heat off.

Assemble the Tacos

  1. At the same time as cooking the eggs, place tortillas in a toaster oven until warmed through. You could also grill over a gas flame on the stove top using tongs.
  2. Fold the warm fluffy eggs into warmed tortillas, top with arugula, tomatoes, a sprinkle of salt, and any optional additions, and a squirt of hot sauce. Eat immediately!
