How to Make the Best Easy Baked Tacos

These easy baked tacos are the perfect weeknight dinner solution when you need something delicious on the table fast. With just 15 minutes of prep and 15 minutes in the oven, you’ll have crispy, cheesy tacos ready to serve the whole family. The beauty of this recipe is its simplicity—seasoned refried beans and melty cheese create a satisfying base that’s completely customizable.

What makes these baked tacos so versatile is that they work equally well as a vegetarian main course or as a base for your favorite protein. Add shredded rotisserie chicken, seasoned ground beef, or keep them meat-free—either way, they’re absolutely delicious. The oven does most of the work, giving you time to prep fresh toppings while the tacos get perfectly crispy.

Don’t skimp on the toppings! Fresh diced tomatoes, creamy avocado, tangy sour cream, and a squeeze of lime take these simple tacos to the next level. A drizzle of your favorite hot sauce adds just the right amount of heat. These easy baked tacos are proof that amazing meals don’t have to be complicated.

Instructions

Prepare and Bake

  1. Preheat oven to 375°F.
  2. Line a 9x13 inch baking dish with parchment paper.
  3. Arrange 8-10 taco shells in the best fitting arrangement. You can also bake on a lined sheet pan, set on their side.
  4. Stir the can of beans with a spoon and spoon 2 heaping tablespoons into each shell. Top with a little hot sauce if desired.
  5. Top the beans with grated cheese and place in the oven for 15-20 minutes, or until warmed through.

Serve

  1. While baking, prep the toppings: dice the tomato, slice the avocado, and chop the cilantro and scallions.
  2. Remove tacos from oven and garnish with your choice of toppings, hot sauce, and sour cream.

Notes

  • Feel free to add cooked ground meat or shredded chicken in place of the beans, or in addition to them.
  • Use organic corn tortillas and beans for a healthier option.
  • Black beans can be substituted for refried beans if preferred.
