Cherry Clafoutis

How to Make the Best Cherry Clafoutis

Cherry clafoutis is a beloved French dessert that strikes the perfect balance between a custard and a cake. Originating from the Limousin region of France, this rustic dessert has been delighting home cooks for centuries with its simple preparation and impressive results. The magic happens when fresh cherries are suspended in a silky, lightly sweetened batter that puffs up beautifully in the oven.

What makes this recipe special is its versatility and ease. With just a few pantry staples and fresh cherries, you can create an elegant dessert that looks like it came from a French patisserie. The addition of Greek yogurt gives the batter a wonderful tanginess that complements the sweet cherries, while the optional brandy adds a subtle depth of flavor that makes this version truly memorable.

Serve this cherry clafoutis warm from the oven with a dusting of powdered sugar and a scattering of toasted almonds for the perfect finish. It’s equally delicious as a special breakfast treat or an after-dinner dessert, making it one of those recipes you’ll find yourself returning to again and again.

Instructions

Prepare the Cherries

  1. Pit the cherries and toss them in a bowl with brandy and vanilla. Let sit while making the custard.

Make the Batter

  1. Using a blender or an immersion blender, lightly blend eggs, sugar, flour, salt, half and half, and Greek yogurt just enough to make the batter smooth.
  2. Let the batter rest for 30 minutes, allowing the gluten to relax and preventing a rubbery texture. Preheat the oven to 375°F.

Assemble and Bake

  1. Melt butter and put it into a 9-inch or 10-inch baking dish or pie dish, swirling around making sure it coats the sides.
  2. Pour batter into the pan. Drop the cherries into the batter (adding them after keeps the batter from turning pinkish gray). Drizzle any remaining juice over the top.
  3. Bake in the oven for 20-25 minutes, just until it is not jiggly. The center can be a little soft.
  4. Let cool 10 minutes before cutting. Serve warm or at room temperature with scattered almond slices and a sprinkle of powdered sugar.

Notes

  • Use a 9-inch or 10-inch baking dish or pie dish for best results.
  • Sweet cherries of any variety work well. Pie cherries are fine too, just a little more tart.
  • For a gluten-free version, substitute the all-purpose flour with a gluten-free flour blend.
  • You can substitute buttermilk for the Greek yogurt if preferred.
