How to Make the Best Baked Zucchini with Pecorino and Basil
This baked zucchini with pecorino and basil is the perfect side dish when you want something simple yet incredibly flavorful. The high oven temperature creates beautifully crispy edges while keeping the centers tender and juicy. A light coating of olive oil, garlic, and seasonings transforms ordinary zucchini into something special.
The pecorino cheese adds a sharp, salty punch that caramelizes in the oven, creating those irresistible golden-brown spots. Fresh basil scattered over the top just before serving brings brightness and freshness that balances the rich, savory flavors perfectly.
This versatile side dish pairs wonderfully with grilled proteins, pasta dishes, or can even stand alone as a light vegetarian main. Ready in just 30 minutes, it’s an easy addition to any weeknight dinner or weekend gathering.

Instructions
Baked Zucchini
- Preheat oven to 425°F.
- Slice the zucchini into 1/3 inch disks. Place in a bowl and drizzle with the olive oil, sprinkle with salt, garlic powder, pepper and optional chili flakes. Place in a single layer on a parchment-lined sheet pan. Lightly sprinkle each slice with 1/3 teaspoon grated pecorino.
- Bake in the oven 18 minutes, check, and if needed, rotate or tent lightly with foil (if getting too dark) and continue baking 5-10 minutes until fork tender. You want tops nicely golden and crispy with tender middles.
- Place on a platter and scatter with the torn basil leaves. Enjoy!
Notes
- You can substitute parmesan or asiago cheese for the pecorino.
- Aleppo chili flakes add a mild, fruity heat—regular chili flakes work as a substitute.
- Make sure to slice the zucchini evenly for consistent cooking.
