Authentic Szechuan Sauce

How to Make the Best Authentic Szechuan Sauce

This Authentic Szechuan Sauce brings the bold, complex flavors of Sichuan cuisine right to your kitchen. The distinctive numbing heat from Szechuan peppercorns, combined with the depth of sesame oil, soy sauce, and Chinese Five Spice, creates a sauce that’s perfect for elevating any dish.

What makes this sauce so versatile is its adaptability—use it as a stir-fry sauce for vegetables and proteins, a marinade for chicken or tofu, or even a dipping sauce for dumplings and spring rolls. The recipe comes together in just 5 minutes, making it an easy addition to your meal prep routine. Plus, it’s naturally preservative-free and can easily be adapted for gluten-free or vegan diets.

The secret to authentic flavor lies in toasting the Szechuan peppercorns before crushing them, which releases their aromatic oils and creates that signature tingly sensation. Store this sauce in the refrigerator for up to 10 days and you’ll have restaurant-quality Szechuan flavor ready whenever inspiration strikes.

Ingredients

Szechuan Sauce

Instructions

Prepare the Sauce

  1. Toast szechuan peppercorns in a hot dry skillet over medium heat, until fragrant, about 1-2 minutes. Crush.
  2. Place all ingredients in a medium bowl or small jar and whisk until well combined.

Usage Options

  1. For stir-fry sauce: Whisk in 2-3 teaspoons cornstarch to thicken. Try adding a few dry Chinese or Arbol chilies (5-10) to the stir-fry for heat, right before adding the sauce. Do not eat the chilies.
  2. For marinade: Skip the cornstarch and season what you are marinating (chicken, tofu, beef) with salt, as the marinade alone may not be salty enough.
  3. For dipping sauce: Place in a small saucepan, whisk in 2-3 teaspoons cornstarch to thicken, and bring to a simmer for 1 minute.

Notes

  • This sauce keeps for up to 10 days in the refrigerator.
  • For a spicier sauce, increase the garlic chili paste or add 1 teaspoon chili flakes.
  • Use gluten-free liquid aminos instead of soy sauce for a gluten-free version.
