Asparagus Tart with Gruyere and Tarragon

How to Make the Best Asparagus Tart with Gruyere and Tarragon

This elegant asparagus tart is the perfect dish when you want to impress without spending hours in the kitchen. With just under 30 minutes of hands-on time, you can create a restaurant-quality appetizer that features tender asparagus spears atop a creamy, herb-infused filling, all nestled in a crispy puff pastry shell. The combination of fresh French tarragon and chives adds a sophisticated herbaceous note that pairs beautifully with the nutty gruyere cheese.

The beauty of this recipe lies in its simplicity and flexibility. The cream cheese base provides a rich, smooth foundation that holds the asparagus securely in place, while the gruyere adds a slightly tangy, melted richness. Fresh tarragon is the star here, contributing an anise-like flavor that elevates the dish from simple to special. If you can’t find fresh tarragon, this tart would also work well with fresh dill or parsley, though the flavor profile will be different.

This versatile tart works wonderfully as an appetizer for dinner parties, a light lunch paired with a crisp salad, or even as part of a vegetarian brunch spread. Make it ahead of time by preparing all the components, then simply assemble and bake just before serving for the best presentation.

Instructions

Prepare the Crust

  1. On a piece of parchment, roll puff pastry out to 1/4 inch thickness approximately 11 x 13 or 12 x 12. Transfer parchment with pastry to a standard baking pan. Prick the dough with a fork.
  2. Score the crust by slicing 1/2 way through about 1 inch from the edge. This will allow the crust to rise. Brush the top with the egg wash for golden color. Bake crust at 400 degrees for 18 minutes (or until it looks puffed and starting to brown). Cool.

Prepare the Filling

  1. In a bowl mix together cream cheese, dijon, lemon zest, chives, tarragon, salt, and pepper. Spread evenly over the cooled pastry crust with a metal spatula. Sprinkle gruyere over cream cheese mixture.

Add the Asparagus and Bake

  1. Cut asparagus spears to fit on your tart, toss with a little olive oil and arrange on top of tart.
  2. Bake on the middle rack of the oven for 15-20 minutes.
  3. Cool for 20 minutes before slicing.
