  1. Place bread cubes, cold water, almonds, garlic, vinegar, salt and pepper in a blender and blend until completely smooth.
  2. Place the blender on medium-low and slowly stream in the olive oil (or add a little at a time), blending until creamy, smooth, and emulsified.
  3. Taste and adjust salt and vinegar to taste.
  4. Chill until ready to serve.
  5. Serve in bowls and garnish with green grapes (traditional), grape tomatoes, or figs, a drizzle of olive oil, and a sprinkling of pepper.

Notes

  • Use Marcona almonds for the most authentic flavor, but blanched regular almonds work well too.
