Easy Roasted Beets

How to Make the Best Easy Roasted Beets

Roasted beets are one of those simple yet transformative dishes that can elevate any meal. When you roast beets low and slow in the oven, their natural sugars caramelize and their earthy flavor becomes wonderfully sweet and mellow. This easy method requires minimal prep—just scrub, drizzle with oil, season, and let the oven do all the work.

The beauty of perfectly roasted beets lies in their versatility. Once cooked, you can slice them for salads, dice them for grain bowls, blend them into hummus, or simply enjoy them as a colorful side dish with a drizzle of balsamic glaze. They pair beautifully with goat cheese, walnuts, citrus, and fresh herbs like dill or parsley.

Whether you’re meal prepping for the week or looking for a nutritious addition to your dinner table, these roasted beets are a kitchen staple you’ll come back to again and again. Rich in fiber, vitamins, and antioxidants, they’re as good for you as they are delicious.

Ingredients

Roasted Beets

Instructions

Roasting the Beets

  1. Preheat your oven to 375°F.
  2. Place scrubbed, whole unpeeled beets in a dutch oven. If any are overly large, cut in half so all are roughly the same diameter. For faster cooking, feel free to halve all beets.
  3. Drizzle generously with olive oil and season with salt and pepper.
  4. Cover and roast until fork tender, 60-90 minutes, depending on size. If using small beets, check at 45 minutes.
  5. Let cool and remove outer skins if desired.
  6. Use in salads, side dishes, and more.

Notes

  • Smaller beets will cook faster—check them at the 45-minute mark.
  • The skins slip off easily once the beets have cooled.
  • Store roasted beets in an airtight container in the refrigerator for up to 5 days.
