15 Minute Wonton Soup

How to Make the Best 15 Minute Wonton Soup

When you need a warm, comforting meal but only have minutes to spare, this 15 Minute Wonton Soup is your answer. The secret is a fragrant lemon ginger broth that comes together in just a few minutes on the stovetop—simply sauté leeks and ginger in olive oil, then add your favorite broth and let the aromatics work their magic.

Store-bought wontons are the time-saving hero of this recipe. Whether you prefer chicken, shrimp, or vegetarian varieties, they cook directly in the simmering broth and are ready when they float to the surface. The result is a restaurant-quality soup that tastes like you spent hours in the kitchen.

Don’t skip the finishing touches—a handful of fresh greens wilted into the hot broth adds color and nutrition, while the squeeze of lemon at the end brightens every spoonful. Top with scallions, cilantro, sesame seeds, or a drizzle of sriracha for a customizable bowl that hits all the right notes.

Instructions

Make the Soup

  1. In a medium pot, saute the leeks and ginger in oil, over medium heat, until fragrant, about 2 minutes.
  2. Add the broth, cover, and bring to a boil.
  3. Add the wontons and simmer according to directions on the package (3-5 minutes depending on size). They normally float when cooked through.
  4. Taste the broth and add salt and a squeeze of lemon if you like. I like mine quite lemony, but season to your own taste.
  5. Drop in the greens, cooking until wilted. Spinach will take 45 seconds, kale will take longer.
  6. Divide among two bowls and sprinkle with any of the garnishes.

Notes

  • Use store-bought frozen wontons for the quickest preparation.
  • Adjust the lemon juice to taste—it brightens the broth significantly.
  • Add more greens for extra nutrition without adding much cooking time.
